Solution found. Panasonic has a much better remote operation than Sony's. In the Panasonic 4K camcorder HC-VX870 all manual settings are retained in WiFi control. Furthermore you can remotely change video Rec Format (4K/HD/MP4/AVCHD), Recording Mode such as Manual or Auto, and White Balance. Of course Zoom as well - the only control available on Sony WiFi control, besides switching from video to still which both WiFi controls let you do. Until Sony lets you at least retain your manual settings in WiFi mode the AX53's WiFi control seems to be useful only for baby-monitoing.
I have the Sony X70 which lets you control the iris so that your video exposure can be remotely corrected but even that does not have the Panasonic's flexibility. The Sony X70 4K cam is $2500. The Panasonic VX870 4K costs only $900.
I am not sure if this post will be allowed on the Sony forum but if it is then this may be useful info for anyone looking for a solution of WiFi controlling a consumer camera that can record usable footage.
May be Sony will remove the WiFi restrictions in a future firmware release. I will keep hoping because I am past the 30-day return on the AX53
